Any salad mix can be used to make japanese inspired salad. I usually purchase spring mix or plain romaine lettuce and pair with campari tomatoes cut in halves. There are many types of tomatoes like hothouse, beefsteak or bite sized ones like grape or cherry tomatoes, however I find that medium sized juicy campari tomatoes are in the perfect size to pair with salads.

I will also add nutritious wakame (japanese seaweed), which is loaded with magnesium, iodine, irons and calcium etc. to the salad. all you need to do is to soak the dried wakame in a bowl of water to soften it before serve.

To make your own fresh wafu sesame salad dressing can be easier than you think.

Method for one serving shown in picture:

you’ll need:
– 1 tbsp sesame oil
– 3 tbsp ponzu
– some toasted sesame
– 2 tbsp daikon oroshi (grated radish)
– 1 tsp maple syrup or any types of sugar
– some freshly ground peppers and coarse salt
– add some lemon juice if you desire

The above measurements are rough estimates, i never really follow measurements strictly, in most of the time i always start with less and add on it when i want a certain stronger flavour. please adjust more or less to suit your own taste.

 

|和風芝麻醬油沙律|

首先,沙律選用的菜可以很隨意,我一般都會購買prewashed有菠菜、火箭菜、生菜等的spring mix或者其他,然後會選用campari番茄切半。番茄種類多,包括有hothouse, beetsteak, 或者迷你的grapes或cherry tomatoes,不少人都會喜歡用大番茄如hothouse切片或者利用整粒cherry tomatoes,不過我覺得最適合配搭沙律的番茄其實是大小適中又多汁而且又容易沾上沙律醬油的campari tomatoes。

除了沙律菜和番茄之外我都會加入含豐富鎂和鐵質等維他命的海草wakame。海草做法非常簡單,先利用水浸軟,然後就可以拌沙律醬油或者加入拉麵等。

自製沙律不一定要用在超市購買的沙律汁/醬,自己製作沙律醬油亦可以很簡單。

圖中一人份量大的芝麻醬油做法:

材料:
-1湯匙芝麻油
-3湯匙柑橘醬油(ponzu)
-少許烤過的芝麻粒
-2湯匙大根蓉
-1茶匙楓樹糖漿或者其他糖類
-少許鮮蘑黑胡椒和粗鹽
-喜歡更酸的可以再加少許檸檬汁

份量方面其實可以隨個人喜好和製作份量而定,大家可以參考以上的份量不過如果認為太鹹或者太淡可以隨便加多或減少醬油份量。芝麻油有非常強烈的味道,建議先不要加太多。

    1. If you like coarse sesame dressing it’s always better to make your own, just remember to toast it before you grind! Some people also buy the sesame powder to skip a step, it works well too.
