Maple glazed walnuts

琥珀核桃是很多香港人的童年集體回憶,還記得以前在鯉魚門有專門售賣琥珀核桃的小店,核桃本身價格一點兒都不便宜,所以琥珀核桃從來都不是廉價小吃。

使用屬於天然糖類的楓樹糖漿製作琥珀核桃會比較健康,除了是餐前小吃或者看電影時必備的「口立濕」之外,用來拌沙律中和酸味都是蠻不錯的。

製作非常簡單,先燒熱乾鑊來烘/炒核桃,然後再注入楓樹糖漿,熄火炒勻,最後將核桃放在烘培紙上攤開放涼。

最後可以灑上炒過的白芝麻裝飾。

Sugar glazed walnuts is a type of popular snack in the old Hong Kong, it is considered to be a childhood collective memory of many Hong Kongers.  These walnut snacks were sold in a small stall in lei yu mun, and they have always been expensive nibbles throughout the years.

To make these maple glazed walnuts is rather simple, first heat a dry pan and toast the walnuts, then pour maple syrup over them, turn off the heat and mix.  Spread out and rest the glazed walnuts on a parchment paper to cool down.

Garnish with toasted sesame if desire.
